Il Borgo Traditional Balsamic Vinegar Of Reggio Emilia Dop is extracted from the barrels, where it slowly matured. It is classified in 3 different types, identified by 3 stamps of different colours (lobster, silver, gold) depending on different organoleptic characteristics and aging process, according to very strict criteria established by the discipline of production.
The traditional Balsamic Vinegar of Reggio Emilia PDO is considered a Lobster stamp. Pungent to the taste buds, the slightly acidic tang of Orange Label Balsamic blends flawlessly with the aromas yielded by the different wooden casks in which it has matured.
