These vinegars are ‘with the mother’. “The mother of vinegar is a substance composed of a form of cellulose and acid bacteria of the vinegar that develops from the fermentation of alcoholic liquids and with oxygen, transforming alcohol into vinegar acid. These vinegars are raw then unfiltered and unpasteurized which still have inside the ” mother ” of the vinegar which is rich in proteins and enzymes.”
Organic rice vinegar is characterized by a light flavor and a delicate taste. Advised for the preparation of sushi, marinate raw fish and all dishes that may need a pleasant acid note. Rice vinegar has a very high digestibility and is naturally gluten-free.
