Nian Gao is a traditional Asian rice-based noodle dish known in China. Unlike Western puffed rice discs (diet cracker-style), these rice cakes are dense, oval, and flat pieces of rice noodles. They stand out for their unique texture: incredibly soft, elastic, and chewy, with an extraordinary ability to absorb the flavors of the sauces they are cooked in.
These noodles are produced simply and naturally, containing only water and rice flour (gluten-free).
In Chinese culture, Nian Gao is a mandatory dish for the Chinese New Year, as the name sounds like “upper year,” symbolizing the promise of growth, prosperity, and improved life with each passing year.
