Beyond producing prestigious wines, in the Purgatori estate the Torres family preserves olive trees over 400 years of age with whose olives it produces high quality oils. With a traditional method, the arbequina variety is mostly harvested, but also the robal, farga and picudo varieties are collected by hand and pressed immediately to preserve all their flavor.

Extra virgin olive oil The Silence Arbequina is made from olives of the Arbequina variety from olives from olive trees (Romanian ears) more than four hundred years from our farm “Aranyó,” also called the Deseillerados, in the heart of the Les Garrigues area.

The olives are collected by hand and immediately taken to the mill to ensure a perfect state of the raw material at the time of the oil being made. The olive harvesting period runs from mid-October to the end of November. The oil is obtained from the first cold extraction, using only mechanical procedures.

The Silence Arbequina has the typicality of the Arbequina variety. Artichoke, almonds and tomatoes are the main notes of the aromatic palette of this oil. It is fresh and its aroma is fine and delicate. The first sensation in the mouth is the sweet, with bitter and spicy ones that are noticed.

The Silence Wine Vinegar is elegant dark peck red with light tile touches. On the nose stands out for its aromatic intensity and fineness of acetic notes. He’s generous and persistent in palate with notes of great amplitude and good balance of the sweet with the acid. To preserve the properties of this vinegar, only a slight filtering is done, so natural sediments can appear in the bottle.
