A native Italian variety of durum wheat, called Cappelli, is used to produce this type of pasta. It is taller than common wheat and, throughout its long history, has never undergone any modification and is therefore easy to digest.

Product Description

Cappelli is a type of wheat used to produce superior-quality “Pasta di Gragnano PGI.” In nature, the ears of wheat stand majestically in the fields, characterized by the typical “black whiskers” at the tips. This durum wheat semolina is distinguished by its intense aroma, bold flavor, and high protein content. The Cappelli variety, selected by Nazareno Strampelli in the early 1900s, can be considered a “chosen variety” both for its exceptional protein and organoleptic characteristics and because it is the ancestor of many other varieties still cultivated today.
Pastificio Faella uses only 100% Italian durum wheat semolina, rigorously processed in bronze and slowly dried at low temperatures. Its production is made with selected mixtures of Italian durum wheat semolina, slow kneading with water from the Lattari Mountains, bronze extrusion and traditional drying at very low temperatures (max.: 48°C) for a period that can reach 60 hours, resulting in a pasta with ideal consistency and unmistakable aroma and flavor.
Keeping with tradition, Pasta Faella produces typical Gragnano shapes, such as Le Candele (which requires up to 60 hours of slow drying), and preserves biodiversity by using historic Italian grains, such as “Senator Cappelli” which is used for a special spaghetti shape.

Preparation Suggestion:

Boil in plenty of water (3,5 litres for 500 of pasta) for 11 minutes.
