The excellent oil from Cutrera de Monte Iblei seasons this pesto, whose ingredients come exactly from this Sicilian region: tomatoes, mushrooms and almonds. From wild herbs, not only the seeds, but whole parts of plants are traditionally used. It is a delicious bruschetta spread and aromatic companion to many summer dishes that want a Sicilian twist.
