Vegetable Wok

A simple and delicious recipe.

  1. The first thing we should do is peel and blanch the courgette for about 10 minutes. Drain and set aside.
  2. Peel the carrots and garlic, and cut them into thin sticks along with the green beans. Wash the peppers and dice them, chop the broccoli, and cut the asparagus into small pieces, reserving the whole tips.
  3. In a wok with a drizzle of olive oil, at the moment sauté these ingredients together with the chives that we blanched. Sauté until al dente.
  4. Wash the cherry tomatoes and mushrooms and cut them into quarters. Add everything to the wok and mix with the rest of the ingredients. When everything is at the cooking point, remove the contents to a plate.
  5. In the same wok, add a little more oil and olive oil and sauté the bacon cut into strips and the peeled and sliced garlic, leave for a few minutes to brown well, add the smoked paprika and quickly add all the vegetables again, we sauté well so that the paprika incorporates with all the ingredients. Season with salt and serve with a drizzle of olive oil on top.
