Rice sticks are a very thin, dry rice noodle, traditionally known in China as Mifen. They differ from rice cakes (which are thick and chewy), appearing in delicate, translucent strands after cooking. They are widely appreciated for their quick preparation and light texture, being a naturally gluten-free product suitable for vegans.
Because they are very thin and delicate, if you boil rice sticks in a pan like regular pasta, they will break, release too much starch, and become soggy. The correct and traditional method for stir-frying is rehydration: soaking, draining, and then stir-frying.

This dough is the perfect base for creating a Sichuan or Cantonese style stir-fry.
