Fruit Jam Cake

A quick way to make a delicious cake for the family.

  1. Switch the oven on to 180º. Beat the egg whites and set aside. Add the sugar to the egg yolks and beat until light.
  2. Add the butter and yoghurt and mix. Add 3 tablespoons of the fruit jam and mix.
  3. Add the sifted flour and mix gently. Add a small part of this mixture to the egg whites and mix gently from bottom to top with a spatula until everything is incorporated.
  4. Add the two mixtures and continue mixing in the same way: gently, from bottom to top.
  5. Place the dough in a greased tin. Set aside a small part of the dough. Distribute pieces of fruit jam on top of the pastry. Cover with the rest of the pastry.
  6. Bake for 35/40 minutes, or until the toothpick test comes out clean.
  7. As the fruit jam is heavier than the pastry, it will sink to the bottom of the tin. So when you turn the cake over, the fruit jam will be on top.
