Mixed paella is a typically Spanish recipe made with rice, seafood, meat and vegetables that cook in a rich broth of vegetables and saffron. The result is a colourful dish and a perfect blend of flavours.

Ingredients

Preparation Method

  1. Start by mincing a clove of garlic. Thinly slice an onion, green pepper and red pepper. Cut half a chorizo into thin slices and two tomatoes into small cubes. Prepare three cups of needle rice, 250 grams of mussels, 500 grams of shrimp, two tablespoons of saffron, a cup of peas and salt, olive oil, and pepper to taste.
  2. The first step in making this recipe is to make a stew so that the dish has all the flavor it deserves. To do this, take a frying pan and add a drizzle of olive oil along with the onion cut into strips and the chopped garlic.
  3. Wait about three minutes or until the onion looks translucent. Then add the prawns and the sliced chorizo to the sauté. Mix everything together very well and cook for about three minutes. Put the prawns and the chorizo aside in a separate container for later use.
  4. In the next step, add to the same pan the peppers in strips, the tomatoes previously cut into cubes, and the peas. Mix everything very well so that all these flavors combine and cook for a few minutes more.
  5. Then add the three cups of rice and the key condiment of this wonderful dish, saffron. Stir everything together well, so that it is well distributed in the pan. Add six glasses of water and stir again. Do not forget to season with salt to taste.
  6. Finally, three minutes before the end of the rice cooking time, add the prawns, the mussels, and the chorizo. Leave to cook a little longer so that all the flavors combine, creating a wonderful harmony. Serve immediately so that you don’t lose the creamy sauce of this delicious rice.
