With the Serra de Medro on the horizon, the olive groves that surround the ruins of the centuries-old chapel of Nossa Senhora das Neves, offer us year after year, olives of unparalleled quality. Since 1973, the property’s olive trees and their fruit have been the center of attention. The fruit of the work throughout each year culminates in the harvest, where the best olives are selected in their optimal state of maturation. Only months later, after a natural curing process, the first preserved olives begin to taste, just like the ones inside this bottle. Nothing else enters this natural cure, apart from time, water, salt, oregano and bay leaf.
The Galega olive has an easy separation of the pulp from the pit, which makes it suitable for conservation. Galega olive oil has sweet sensations, without bitterness or spiciness.
