Preparation Method

  1. Put the cream and sugar in a large saucepan over low heat and bring to a boil slowly. Cook for three minutes, remove from the heat and leave to cool.
  2. Add the lemon juice, lemon curd, and lemon zest and beat well with an electric mixer until thick and creamy.
  3. Spoon the lemon cream mixture into six glasses and refrigerate for at least three hours.
  4. Top with a spoonful of Lemon Curd and serve with Shortbread.
