Cherry Cake

A recipe for the real sour cherry cake from Óbidos with a sour cherry and chocolate filling and chocolate frosting. Worth a try.

Ingredients

  • 150 g culinary chocolate
  • 100 g powdered sugar
  • 50 g butter

Preparation Method

  1. Beat the yolks with the sugar, add the softened butter and beat again little by little, adding the almonds and the grated chocolate.
  2. Whip the egg whites and add a little vanilla
  3. I put the dough in a high, and large form that I have, greased and sprinkled, with butter and flour respectively and take it to the preheated oven for about 30 to 40 minutes.
  4. Unmold, and let cool! I cut the cake as best I can in half
  5. I drizzle the 2 parts with sour cherry liqueur and put sour cherries (without the pit), but these are in only one part of the cake and then I join the two parts.
  6. After joining, I cover the cake with the chocolate, 150 grs, which I soften in a bain-marie, mix the powdered sugar.
  7. Once off the heat, add the butter and 3 tablespoons of sour cherry liqueur, mix well, then frost the cake.
