Risotto of Dried Mushrooms

A simply delicious risotto!

Preparation Method

  1. Soak the mushrooms for some time. Remove them from the water and heat the water with salt and pepper. Let it boil to make the mushroom stock.
  2. Separately, sauté chopped onion in olive oil until brown. Add the rice and let it fry well. Add the white wine and let it be absorbed by the rice.
  3. Gradually add the mushroom stock, always hot, as the rice dries out. In the end, flavor with a little thyme.
  4. Remove from the heat and add the sliced mushrooms, the butter, and some grated cheese. Stir well and adjust the salt and pepper seasoning.
  5. Serve and garnish with the remaining grated cheese and thyme.
