Caesar Salad with Croutons

Knowing how to make the most of food is a great way to save time, money and reduce environmental impact. Caesar salad with croutons is ideal for using up the roast chicken left over from the day before.

Ingredients

  • 200 g shredded roast chicken leftovers
  • 4 pieces of lettuce hearts
  • 50 g shredded parmesan cheese
For the sauce
  • 1 pc anchovy
  • 1 clove garlic
  • ½ teaspoon mustard
  • 1 unit egg yolk
  • 1 tbsp. lemon juice
  • 75 ml sunflower oil

Preparation Method

  1. Unroll the lettuce hearts into a salad bowl. Place the shredded chicken, the parmesan cheese and the croutons on top.
  2. For the dressing, place all the ingredients in the bowl of a food processor and mix well. Drizzle the salad with this dressing and serve immediately.
