Chicken with Preserved Lemon

A good typical recipe from Africa, full of flavour but easy to make!

Ingredients

  • 1 chicken cut into pieces
  • 1 onion, finely chopped
  • 2 finely chopped garlic cloves
  • 500 ml chicken stock
  • 1/2 teaspoon powdered ginger
  • 1 1/2 teaspoon cinnamon powder
  • 1 teaspoon turmeric powder
  • 4 pickled lemons
  • 2 bay leaves
  • Salt and pepper to taste
  • chopped parsley

Preparation Method

  1. Heat some olive oil in a large frying pan and brown the chicken.
  2. Remove the chicken from the oil and place it on an oven tray.
  3. Add the onion and chopped garlic to the olive oil and sauté.
  4. Add the chicken stock, ginger, cinnamon, saffron, olives, and the lemons previously separated from the pulp and cut into thin strips, as well as the bay leaves.
  5. Season with salt and pepper. Pour this mixture over the chicken and bake in a moderate oven for approximately 1 hour.
  6. If necessary, add a little water to the chicken.
  7. Serve sprinkled with chopped parsley.
