Coconut Pudding with Port Wine Syrup and Plums in Syrup

This Pudding includes grated coconut, coconut milk and condensed milk and, for the syrup, plums and a good port wine.

Ingredients

  • 1 can of condensed milk
  • 2 cups of whole milk
  • 200 ml of coconut milk
  • 4 spoons of corn starch
  • 100 grams of grated coconut
Syrup

Preparation Method

  1. Place the condensed milk, the whole milk, the coconut milk and the grated coconut in a pan and bring to a medium heat to thicken.
  2. Stir constantly to avoid burning or curdling. The desired consistency is that of a pudding.
  3. Then place the preparation in a previously wet form. Place in the fridge for at least two hours.

Syrup

  1. Bring a pan with the plum, sugar and wine to the boil.
  2. Let it boil, stirring constantly, until it forms a thick syrup.
  3. Experiment and adjust the sugar to your taste. Reserve.

When the pudding is cold, unmold, introduce the syrup and serve immediately.
