Onion Soup with Croutons

Gratinated onion soup is a traditional French culinary specialty.

Ingredients

  • 6 medium onions, thickly sliced
  • 3 tablespoons of butter
  • ¼ cup white wine
  • 2 tbsp (tablespoons) of wheat flour
  • 1 cup water to dissolve the wheat flour
  • 1 and ½ litre of broth

Preparation Method

  1. Place the butter in a pan and let it melt. Add the onion with the butter and a little salt.
  2. Let the onion brown for 30 to 40 minutes over low heat. Stir from time to time until golden brown.
  3. Put the wine in the pan with the onion. Stir well and let caramelize the onion.
  4. Put the flour mixed with the water in the pan with the onion.
  5. Stir well until it boils. Add the cold broth to the pan with the onion.
  6. Mix it so that no lumps of flour remain. Leave to cook on low heat for 30 minutes or until the soup thickens.
  7. Transfer to a bowl. Salt and pepper to taste.
  8. And serve the onion soup with the croutons.
