Coconut Cheesecake

Ingredients

  • 250 g Coconut Biscuits
  • 200 g cream cheese
  • 200 g whipping cream
  • 180 g butter
  • 120 g grated coconut
  • 6 sheets of gelatine
  • Cocoa and grated coconut for sprinkling

Preparation Method

  1. Place the biscuits and the butter in a mincer and crush well until they become a cream.
  2. Place the mixture in the bottom of a 22 cm diameter baking tin, smooth it out and place it in the cold.
  3. Whip the whipped cream with the sugar, add the cream cheese and the coconut cream and whip a little more. Put aside.
  4. Soak the gelatine leaves in cold water for approximately 10 minutes. Drain and melt in a little hot water.
  5. Add the grated coconut to the cream and cheese mixture and stir. Add the melted gelatine and mix well.
  6. Pour this mixture into the mold, on top of the biscuit base, and put it back in the chill until it solidifies. Remove from the tin and serve, sprinkled with cocoa and grated coconut.
