Poke bowl with Sweet Potato Chips

A practical and fresh recipe for hot summer days.

  1. Start by cutting the pumpkin into small cubes, seasoning with salt, pepper, the olive oil and Modena Balsamic Vinegar, and bake for 25 minutes at 180ºC.
  2. At the same time, prepare the sweet potato chips.
  3. Meanwhile, use a spiralizer to make spaghetti from the cucumber and zucchini, reserving.
  4. Slice the carrot and avocado.
  5. In a bowl, place the rice, on top of the tuna cut into cubes, alternating vegetables and sweet potato chips.
  6. Finish with cashews on top and drizzle with olive oil.
